Full recipe:
Ingredients:
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/4 cup chopped green onions
- 1/4 cup fresh parsley, chopped
- 1/2 cup grated parmesan cheese
- 1/4 cup breadcrumbs (or gluten-free breadcrumbs)
- 1 large egg
- 1 tablespoon olive oil (for frying)
- Freshly ground black pepper, to taste
Directions:
-
Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture.
-
In a large bowl, combine the grated zucchini, green onions, parsley, parmesan, breadcrumbs, egg, and black pepper. Stir until the mixture is well combined.
-
Heat olive oil in a large skillet over medium heat.
-
Once the oil is hot, form the zucchini mixture into small patties, about 2-3 tablespoons each, and place them in the skillet.
-
Cook for 2-3 minutes on each side, or until golden brown and crispy.
-
Transfer the fritters to a paper towel-lined plate to remove excess oil.
